Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 2 cups milk
- 2 large eggs
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, sliced
- Powdered sugar for dusting optional
- Whipped cream for topping optional
Instructions:
In a large mixing bowl, whisk together the flour, sugar, and salt
In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract
Gradually add the wet ingredients to the dry ingredients while whisking continuously until you have a smooth batter
Heat a non-stick skillet or frying pan over medium-high heat and lightly grease it with butter or cooking spray
Pour a small amount of the pancake batter into the skillet, swirling it around to create a thin, even layer
Cook the pancake for 1-2 minutes until the edges start to lift and the bottom is golden brown
Flip it over and cook the other side until golden brown as well
Transfer the cooked pancake to a plate, and repeat the process with the remaining batter, adding more butter to the skillet as needed
Serve the Swedish pancakes warm, topped with sliced strawberries
You can also dust them with powdered sugar and add a dollop of whipped cream if desired
