Gluten-Free Cherry Almond Cheesecake Bars

Enjoy these tasty gluten-free cherry almond cheesecake bars. They have a delicious dairy-free cream cheese filling, a crunchy almond flour crust, and a juicy cherry topping that go together perfectly.

Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut sugar
  • 1/4 cup melted coconut oil
  • 8 oz dairy-free cream cheese, softened
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1/4 cup almond milk
  • 1 cup fresh or frozen cherries, pitted and halved
  • 2 tbsp sliced almonds, for topping

Instructions:

Preheat your oven to 350F 175C

Line an 8x8 inch baking pan with parchment paper

In a bowl, mix almond flour, coconut sugar, and melted coconut oil until well combined

Press this mixture into the bottom of the prepared pan to form the crust

In another bowl, beat the dairy-free cream cheese until smooth

Add maple syrup, vanilla extract, almond extract, and almond milk

Mix until creamy and smooth

Pour the cream cheese mixture over the crust and spread it evenly

Arrange cherry halves on top of the cream cheese layer

Sprinkle sliced almonds over the cherries

Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and the center is set

Allow the cheesecake bars to cool completely in the pan before slicing into squares

Serve and enjoy
