Ingredients:
- 2 cups almond flour
- 1/2 cup Swerve Sweetener
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup butter, melted
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup sugar-free powdered sweetener for glaze
- 1 tbsp heavy cream for glaze
Instructions:
Warm the oven up to 325F 163C
Put parchment paper on the bottom of a baking sheet
Add the Swerve Sweetener, baking powder, cinnamon, and salt to a large bowl and mix them together using a whisk
Melted butter, egg, and vanilla extract should all be mixed in until the dough comes together
Spread the dough out on the baking sheet that has been prepared
Form the dough into a long, flat log that is about 12 inches long and 4 inches wide
Put it in the oven for 25 to 30 minutes, or until its firm and golden brown
Take it out of the oven and wait 15 minutes
Bring the ovens temperature down to 121F 250C
Cut the biscotti log into 1/2-inch slices with a sharp knife
Lay the slices on the baking sheet with the cut side down
For another 15 to 20 minutes, or until the biscotti are dry and crisp, remove from the oven
Take out of the oven and let cool all the way down
Mix sugar-free powdered sweetener and heavy cream in a small bowl until the mixture is smooth
Pour over biscotti that has cooled
Set the glaze aside before you serve
