Ingredients:
- 1 cup cooked quinoa
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup fresh strawberries, diced
- 1/4 cup sliced almonds optional, for topping
Instructions:
Preheat oven to 350F 175C
Grease a baking dish
In a large bowl, combine cooked quinoa, rolled oats, almond flour, melted coconut oil, maple syrup, vanilla extract, baking soda, and salt
Mix well
Fold in diced strawberries until evenly distributed in the mixture
Transfer the mixture to the greased baking dish, spreading it evenly
Press it down firmly to create a smooth surface
If desired, sprinkle sliced almonds on top for added crunch
Bake in the preheated oven for 25-30 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean
Allow the bars to cool completely before cutting into squares or bars
Serve and enjoy
