Ingredients:

- 2 cups water
- 1/4 cup rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- Nori seaweed sheets

- Soy sauce for dipping
- Pickled ginger and wasabi optional
Instructions:
Rinse sushi rice thoroughly under cold water until the water runs clear
Combine rice and water in a rice cooker or a saucepan
Cook the rice according to package instructions
While the rice is still hot, transfer it to a large bowl and add rice vinegar, sugar, and salt
Mix well to season the rice and let it cool to room temperature
Lay a bamboo sushi rolling mat on a clean surface and place a sheet of plastic wrap on top
Place a sheet of Nori seaweed on the plastic wrap, wet your fingers, and evenly spread a thin layer of sushi rice on the Nori, leaving about 1 inch at the top without rice
Add your choice of sushi fillings on top of the rice
Roll up the sushi using the bamboo mat, applying gentle pressure to shape it into a cylinder
Wet the top inch of the Nori to seal the roll
Preheat your Air Fryer to 350F 180C
Place the sushi roll in the Air Fryer basket, seam-side down, and cook for 3-5 minutes until the Nori becomes crispy and golden brown
Remove the sushi roll from the Air Fryer, let it cool slightly, then slice it into bite-sized pieces
Serve with soy sauce for dipping, and optionally, pickled ginger and wasabi
