Ingredients:
- 8 oz lo mein noodles
- 2 tbsp sesame oil
- 3 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 cup shredded carrots
- 1/2 cup snow peas
- 2 green onions, sliced
- 1/4 cup soy sauce
- 1/4 cup peanut butter
- 2 tbsp rice vinegar
- 2 tbsp honey
- 1 tsp grated ginger
- 1/4 cup chopped peanuts optional
- Sriracha sauce optional, for heat
- Fresh cilantro leaves optional, for garnish
Instructions:
Cook the lo mein noodles according to package instructions
Drain and set aside
In a large skillet or wok, heat sesame oil over medium heat
Add minced garlic and cook until fragrant, about 1 minute
Add sliced bell pepper, shredded carrots, snow peas, and green onions
Stir-fry for 3-4 minutes until vegetables are tender-crisp
In a small bowl, whisk together soy sauce, peanut butter, rice vinegar, honey, and grated ginger until smooth
Pour the peanut sauce over the cooked vegetables in the skillet
Stir to combine
Add the cooked lo mein noodles to the skillet and toss until well coated with the sauce
If desired, sprinkle chopped peanuts over the noodles for added crunch
For extra heat, drizzle with Sriracha sauce
Garnish with fresh cilantro leaves, if desired
Serve hot and enjoy
