Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup buttermilk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup mini chocolate chips
- For the streusel topping:
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 2 tbsp unsalted butter, cold and cubed
- 1/4 cup mini chocolate chips
- For the glaze:
- 1/2 cup powdered sugar
- 2-3 tbsp milk
- 1/2 tsp vanilla extract
Instructions:
Start by heating the oven to 350F 175C
A 8x8-inch baking pan should be greased
Mix the flour, sugar, baking powder, baking soda, and salt together in a large bowl
Bring the buttermilk, melted butter, egg, and vanilla extract together in a different bowl and mix them with a whisk
Add the wet ingredients to the dry ones and mix them together just until they are mixed
Once the pan is ready, spread the batter out evenly and fold in the mini chocolate chips
In a small bowl, mix the flour, sugar, and cold butter for the streusel topping
A fork or pastry cutter can be used to mix it until its crumbly
Toss in the little chocolate chips
The streusel topping should be put on top of the batter in the baking pan
In a hot oven, bake for 25 to 30 minutes, or until a toothpick stuck in the middle comes out clean
The glaze can be made while the coffee cake is baking
To make it, whisk the powdered sugar, milk, and vanilla extract together until the mixture is smooth
Take the coffee cake out of the oven when its done and let it cool down a bit
Cover the top with the glaze
Enjoy while still warm
